Greeky Green Bean Casserole

Ingredients

1 ½ pounds fresh green beans*

3 tablespoons olive oil

1 medium yellow onion, finely chopped

3 cloves garlic, minced

2 cups (16 ounces) cremini or button mushrooms, sliced

2 tablespoons all-purpose flour
-
1 1/2 cups chicken or vegetable broth

1 cup Greek yogurt
-
1 cup feta cheese, crumbled
-
1 teaspoon dried oregano
-
1 teaspoon paprika
-
Salt and pepper to taste

1 cup plain crispy baked pita chips, crushed well (for topping)
Step by Step Instructions
Step 1
Preheat the oven to 350F.
Trim the ends of the green beans, and cut into 1 ½ inch pieces.
Blanch the green beans in salted boiling water for 2-3 minutes. Drain and set aside.
Step 2
Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the chopped onions and cook until translucent. Add minced garlic and sliced mushrooms, sautéing until the mushrooms release their moisture. Season generously with salt and pepper.
Step 3
Sprinkle the flour over the mixture, cook for 1-2 minutes, stirring often.
Gradually whisk in the broth, mixing constantly so no lumps form. Add the feta cheese, oregano, and paprika, and stir to combine well. Season more to taste. Remove from heat and add Greek yogurt.
Fold in the green beans into the sauce, ensuring they are well coated.
Step 4
Transfer the mixture to a greased 9” x 13” baking dish and bake for 25-30 minutes. Halfway through the cooking process, add the crushed baked pita chips. Continue to cook until bubbly and golden on top.
Step 5
Sprinkle chopped parsley if desired, and serve warm!

*Note
If you’re using canned green beans, please note that the texture and flavor may vary. Canned beans won’t require blanching, and the overall cooking time in the oven may be reduced.
N**Make ahead:
This green bean casserole can be prepared ahead of time up to step 6. After folding the green beans into the sauce transfer the mixture to the baking dish but refrain from adding the pita chips so they don’t get mushy. Refrigerate the assembled casserole overnight. When ready to serve, preheat the oven and add the crushed pita chips during the last 10 minutes of baking to maintain their crispness.

ah thank you! Well i’m not a HUGE turkey fan, so i’ll always have chicken on the table too haha so pair with turkey / and or chicken. Would be nice with some Greek stuffing of ground lamb and sage as well!
Can you make this a day ahead
yes! I wouldn’t add the pita chips until you’re ready to serve though. So warm when you’re ready and top with the chips. I’ll make a note of the day ahead cooking as well and update soon 🙂
