Whipped Feta Dip

with lemon and thyme

Elevate your appetizer game with this simple dip that comes together in minutes with just a few presses of the food processor or blender. Feta and cream cheese combine for a perfect creamy texture, and is brightened with lemon and honey. Enjoy with pita chips, vegetables, or by the spoonful. My brother suggests spreading the dip on a crostini or your favorite cracker, and then topping with a blackberry or two for an extra sweet bite.

Ingredients

  • 8 ounces soft Greek feta cheese
  • 4 ounces cream cheese, left at room temperature
  • 2 tablespoons lemon juice
  • Zest of one lemon
  • 2 teaspoons extra virgin olive oil
  • 2 teaspoons fresh thyme leaves, plus sprigs for garnish
  • Greek honey, for drizzling

Step by Step Instructions

 Step 1

Break the feta into chunks and add to a food processor, along with the cream cheese, lemon juice, lemon zest, olive oil, and thyme. Mix until well combined. Taste and adjust for extra seasoning or lemon juice/olive oil to desired taste and texture.

Step 2

Serve in a bowl, drizzle with as much as honey as your heart desires, then garnish with sprigs of thyme. Enjoy with pita chips or your favorite veggies.
