This truly is my favorite dip. I’m a people person, but a no touchy-touchy in my personal space type of people person. So, I like to keep some skordalia handy. 😂

It’s a popular Greek meze (appetizer) that comes from Thessaloniki, a cosmopolitan seaside city in Northern Greece, and one of my favorite places to visit. The city lies where Europe meets Asia, and where, as a result, many taste influences converge, dating back to the time of Alexander the Great (his half-sister, Thessalonike, gave the city its name).

Bouyiourdi hardly even needs a recipe. 👍🏼👍🏼 Just assemble a slab of feta, slices of tomatoes and onions, herbs, and peppers, douse it all with extra virgin olive oil and pop the pot in the oven. Once the vegetables are cooked and the feta becomes as gooey as a good hot fudge, the dish is ready to be served directly from oven to table. .

NEW BLOG: French onion soup with a Greek twist! For this version, I added Greek flavors I enjoy at home, such as garlic and oregano, plus used Kasseri and Halloumi cheese rather than Gruyere. The result was excellent and just what you want from a typical French onion soup—caramelized onions, warm broth, a thick baguette, and gooey cheese. Soooo good and comforting. https://elenisaltas.com/2019/02/06/greekified-french-onion-soup/ With a week of snow storms predicted here in Utah, catch me inside eating soups & stews. 😱❄️ Whenever the temperature drops lower than 40 degrees and the weatherman even mentions an approaching snowstorm, all I want to do is bundle up indoors with blankets and put something warm in my belly. My yiayia’s lamb stew always does the trick. 😋

Making a stew is rather easy. You combine the right ingredients with the right sauce for the right occasion. The trick with any stew: Be patient and cook it low and slow. This lets all of the ingredients properly blend together. For this stew, I use lamb, potatoes, and peas, plus a sauce. So good and hearty! Recipe link is in my bio. Enjoy! 😘 Currently on a mission to find the best chocolate chip cookie recipe.. for personal keepsakes not even for my blog 😂 what makes the perfect chocolate chip cookie to you? I’m looking for ones that aren’t crispy, and stay soft, but not too gooey. I’m coming pretty close.. the recipe below is what I have so far. Open to some suggestions on what to change from anyone!! 👇🏼😋🍪 .
-1 1/2 cups all purpose flour
-1 teaspoon baking soda -1/4 teaspoon baking powder -2/3 cup unsalted butter, melted at room temp (or even zapped in the microwave) -1/2 cup firmly packed brown sugar -5 tablespoons granulated sugar -1 egg
-1 teaspoon vanilla extract -1 cup chocolate chips .

1.preheat oven to 350F. 
2.In a large bowl, use an electric mixer and beat together the butter and sugars until well combined. Add the vanilla and egg and beat until mixed in. 
3.in a separate small bowl, sift together the flour, baking soda, baking powder, and salt. 
4.gradually add in the flour mixture, and stir together with a plastic spatula until all the flour is well incorporated. Don’t over mix. Add in the chocolate chips.
5.chill dough for 20-30 minutes.
6.on a baking sheet, scoop dough into heaping teaspoons and form round balls. 
7.bake at 350F for 9-11 minutes, until the cookies are lightly browned on top. Take out and allow to cool. ✨NEW BLOG: Mizithra pancakes! ✨
