Mizithra Pancakes

During the weekdays, my breakfasts consist of coffee or a protein shake. Sometimes, as I’m rushing out the door for work, I grab a muffin or a banana. Truly, I don’t care for breakfast, and have noticed I function better at work by putting off eating until lunch time. When the weekend comes around I’m ready for all the breakfast foods–eggs, bacon, cottage cheese, and toast. Pancakes are a special item I like to make at home, especially because I get to make them how I like them–stuffed with mizithra cheese. Mizithra pancakes have become an instant hit at my home. We love them so much we’ve even had them for dinner one night. Adding mizithra cheese to the batter ups the creaminess factor to the pancakes that you’ll notice with just one bite. My favorite beach in all of Crete, Falassarna stretches far along the coast and makes an especially nice spot for sunset lovers since the beach faces west. There’s no need for an Instagram filter or Photoshop, the natural beauty of Falassarna does all the work. Elafonisi: The early bird gets the worm, or better, a sunbed to lie on at the always-crowded Elafonisi beach. Don’t let the crowds deter you, though. Importance of Parea

“Back in Greece, your circle of friends grows larger and larger as you go through life. In America, the circle mostly shrinks or stays the same size.” “Why do you think that is?” “Time. Nobody has time here. It seems that every time you make a new friend, another friend has grown too busy or moved away.” This quote from the “Humans of New York” Facebook page struck me when I first read it a few years ago. Humans of New York (HONY for short) catalogues New Yorkers in candid photos and quotes, and has since branched out to capture the stories of humans across the globe. Theirs is a view of the world captured by different eyes. While I read HONY posts almost daily, this particular thought caught at my heart. And here I am years later telling you why. Friendships should not dwindle as we go through life. This is backwards, America. We need our friends. We need our parea. I think of parea as a posse of friends that enriches my quality …

Strapatsada (Eggs with tomatoes)

Whenever I spent the night at my grandparents’ home, breakfast was always an egg sandwich with a cold glass of milk. My Yiayia Saltas would toast two slices of bread, spread some ketchup on the toast, and then put a fried egg in the middle. As a final touch, she would cut the sandwich into four squares for my tiny hands to handle. It’s the best egg sandwich I’ve ever devoured. Now that I have graduated to cooking for myself, I like to make STRAPATSADA (also known as kagianas). Strapatsada sounds fancy but it’s a dish you may already have made. It’s merely scrambled eggs with diced tomatoes, olive oil, and any seasonings you prefer. Simple, yes, but my yiayia tells me this was one of my papou’s most beloved dishes. Maybe he loved strapatsada because the ingredients were low cost, or maybe because in the hands of my yiayia, anything turns into a five-star meal. Bakaliaros Skordalia (Cod & Garlic Dip)

My entire house has smelled like a McDonald’s deep fryer for an entire week. Fried oil has seeped into the carpets and walls, and has stubbornly clung to mine and my family’s clothes. It’s actually been a pleasant change of pace from the typical scent of a wet dog. The culprit behind the oil stench is my mistake of opening up any windows to get some fresh air while frying up a traditional dish. March 25th is a double national holiday of Greece, marking a special day of both religious and political events. It’s a spiritual day dedicated to the Virgin Mary, the Annunciation of the Theotokos, when the Archangel Gabriel announced to the Virgin Mary that she would bear a child. It’s also a day that marks the start of the War of Greek Independence when the Greeks demanded their independence after living in centuries under the Ottoman Empire. The Greek Frappe

Water used to be the only fluid I needed to get me through the day. Then I went to Ionian Village and realized I needed something stronger than water. I needed a Greek FRAPPE. All day, every day. Ionian Village, a summer camp in Bartholomio, Greece, brings together over 40 staff members and hundreds of teen campers from across the United States, giving them an experience of a lifetime. Ionian Village strengthens faith, teaches Greek culture, creates epic memories, and even supplies coffee. I was a camper in 2008 and a staff member in back-to-back summers of 2013 and 2014. Serving as a staff member gave me the best experiences of all. It’s also when I drank the most frappes in my life. Staff members work two 20-day sessions from June to August. We cranked through lots of late nights and early mornings because it’s always on-the-go time. You can’t really call it work because eating Kyria Sophia’s delicious Greek food and supervising junkyard wars, music fests, and themed dance parties totally rocks. On travel …
